Our ribs are imported from Denmark and are the highest grade available. We select them by age and weight and meat content. Ribs, like people, vary in size and shape. We try very hard to make each portion correct in weight, even though they may vary visually. Mother nature created these differences and we work with them as best as we can.
Our unique open pit barbecue slow-cooking process tends to leave Ribs, Chicken, Pork and Beef pinkish or redish in color even though the meats are completely and thoroughly cooked. When you see this color, know that it enhances the flavor of our meats, and that's why they taste so good!
